- I think I need to make these Lasagna Cupcakes, but I will need to call them something else. "Cupcakes" should not be savory.
- Mr Jummy & Mrs Yummy are getting along famously. I won't say who they learned this behavior from.
- One of Martijn's uncles passed away a couple of weeks ago and he wore his wedding suit to the funeral. He reached into his inner pocket at some point and pulled out an unopened card.... from our wedding... in 2006!!! Who knows how long it would've been in that pocket if we'd not had a funeral to go to. I'm so thankful there wasn't a check in there, it would've been horribly embarrassing to have to confess why we never cashed it.
- I bought a new camera while I was in the US. I am still learning how to use it but it seems to be pretty snazzy.
- I'm sad to say that I think summer is officially over. Anyone have some yummy soup recipes they'd like to share?

Bacon & Egg Casserole with Tomatoes
We have received approximately 9 billion fresh eggs from Martijn's parents in the recent weeks (a good thing) but I hadn't been feeling particularly inspired on how to use them (a bad thing). I hadn't made a quiche or egg bake for awhile, so this is what I came up with. It goes together really fast and really works as an "anytime of the day" meal. Martijn, who is not a usual tomato lover, said "I really like the tomatoes in this!" I'd call that a success story.
1/2 cup grated cheddar cheese
150 grams (5-6 oz) bacon, cooked up and crumbled
150 grams (5-6 oz) grape tomatoes, sliced (cherry tomatoes will work, just make sure to get some sweet ones!)
1 medium onion, diced
1 bell pepper, diced
6 eggs
1/2 cup evaporated milk (koffiemelk for you Netherlandians)
1 tbsp prepared mustard
Glug of olive oil
Pinch of thyme or preferred herbs
Salt & pepper to taste
Preheat the oven to 350 F (175 C).
Saute the onion and pepper in a little bit of oil until onions are translucent.
Pour a glug of olive oil into the bottom of a baking dish (my baking dish is about 6" X 9"). Tip the dish so that the oil spreads around the bottom of the dish.
Sprinkle the cheese and bacon over the bottom of the baking dish. Arrange the slices of tomatoes over the top of the bacon and cheese. Then spoon the onions and peppers over the top of the tomatoes.
Beat the eggs, milk, mustard, thyme, salt and pepper together. Pour the mixture over the goodies in the baking dish.
Bake uncovered for 40-45 minutes, or until a knife in the middle comes out clean. Let sit for 5 minutes and serve with a nice piece of toast.

Menu Plan Monday- August 16, 2010
I had an attack of the lazies last week and we ate pizza on Friday. The new recipe we tried (Pasta Carbonara with Bacon & Thyme) was really good. I goofed up a little bit and it was more like Pasta Scrambled Eggs with Bacon & Thyme. It still tasted fab though!
Sausages are on sale this week, so I have two meals planned around that. Martijn is the kitchen boss for his dinner and then I'm doing easy peasy soup and sandwiches!
Sizzling Sausage Salad
Bratwurst with Apples, Onion & Sauerkraut
Stuffed Peppers- It's Martijn's turn to host dinner for his friends, so this is his job.
Smoked Salmon BLT & Roasted Yellow Pepper Soup

When Mr Jummy asked us if he could come to Utah with us we just thought that he wanted to be with us. It turns out he had ulterior motives! He was doing what so many other sneaky Dutch fellows do and going on search for a WIFE!

Geez you people talk a lot...
I took this screenshot over a MONTH ago, and things haven't gotten any better since then... I'm slowly slogging through the backlog. I was going to just click "mark all as read" but then I browsed through a few and thought "I CAN'T! There is GOOD STUFF HERE!" So, in 6 months time if you get a random comment from me on a really old post you will know that I'm still picking away at the mountain of posts in my reader.

Menu Plan Monday - August 9, 2010
It was my intention to keep up with my blog while I was in Utah but I chose to spend more time with friends and family there. It's not that I don't love my dear readers, it's just that you get me most of the year!
I'm going to try to ease back into things and figured what better way than to get my rear in gear with menu planning again. I went easy on myself this week with only one new recipe and the others just quick favorites.

I might try to sneak some cauliflower into the green bean casserole just because the head I bought this week is enormous and I don't think we'll eat it all as a normal side dish with the chicken.
